Next each truffle center if formed, again by hand, and then dipped in tempered covature. Machine made truffles are often either made in molds or sent through an enrober to coat them with an outer layer of chocolate. With our system of coating each truffle by hand in tempered chocolate, we can control the outer layer that gives our truffles their distinctive snap as you bite into one of them. When we are satisfied each truffle is the perfect handmade chocolate…it is wrapped in its own colored foil, preserving its flavors and textures to be enjoyed by you.
